Turkey Meatballs Parmesan in Marinara Paleo + Gluten Free

Ingredients: 1 lb ground turkey 1 egg 1/2 cup grated Parmesan cheese 1/2 cup almond flour (and about 3/4 cup more for rolling) 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon Italian seasoning 1 teaspoon salt 1 teaspoon crushed red pepper 1 teaspoon black pepper 1/4 cup olive oil, divided (enough to coat your pan) 1 jar San Marzano Tomatoes 1/2 cup shredded mozzarella 1/2 cup chopped basil

Instructions: 1. Preheat oven to 375 F

2. In a large bowl, mix together the turkey, egg, Parmesan cheese, almond flour, garlic powder, Italian seasonings, salt, pepper, and red pepper. Roll into 1 1/2 inch balls.

3. Heat 2 tablespoons oil or enough to coat a large skillet over medium heat. Roll the meatballs in almond flour and brown them on each side in the oil. Repeat with remaining meatballs. Adding more oil if needed as you go. Remove from the pan and set aside in glass baking dish.

4. Pour marinara sauce in the glass baking dish with meatballs so that the meatballs sit on top. Bake meatballs for 30 minutes sprinkling the mozzarella on top for the last 5 minutes of baking. Garnish with fresh basil and additional salt, pepper and red chili flakes.
