Gluten-Free Oatmeal + Almond Flour Chocolate Chip Cookies

Gotta cookie craving? Why not make it just as tasty and include good sources of fiber and Vitamin E.

Ingredients:

¾ cup palm sugar

1 cup butter, you could use ghee or vegan butter if prefered

1 teaspoon vanilla

1 egg

2 cups quick- cooking oats

2 cups almond flour

1 teaspoon baking soda

¼ teaspoon salt, I used gray salt

1 cup semisweet chocolate chips

1 cup chopped nuts, if desired

Instructions:

1.Heat oven to 350 F.

2.In large mixing bowl, stir palm sugar and butter until blended. Then stir in vanilla and eggs until light and fluffy. Stir in oats, almond flour, baking soda and salt, stir in chocolate chips and nuts.

3. Onto ungreased cookie sheet, drop rounded cookie dough ball 2 inches apart from each other.

4. Bake in the oven for 10 -12 minutes or until golden brown. Allow to cool before removing from cookie sheet, otherwise it will tend to crumble.
