Fall Superfood Salad with Swiss Chard + Pomegranate


Everything about this salad screams superfood and fall. Which I love! Swiss chard is chalked with tons of nutrients its high in Vitamins A,K, and C and contains vitamin E and is high in the anti inflammatory flavonoids. While artichokes fiber has been shown to increase flora in the micro biome and help keep blood sugar levels stable.

Ingredients:

1 bunch of swiss chard torn to 1” pieces

4 tablespoons of lemon juice

1 tablespoon olive oil

1 cup artichoke hearts chopped

1 large pomegranate seeded a little over a cup

Champagne vinaigrette approximately 2-4 tablespoons

Goat cheese to taste, I used one log

Instructions:

1.Take collard greens and massage them with lemon juice and olive oil.

2. Deseed pomegranate seeds, chop artichoke hearts and toss into greens.

3. Drizzle with champagne vinaigrette and top with dollops of goat cheese.
