Pistachio Pesto

Pesto! Use it as a salad dressing, top your omelette, or shrimp or chicken off with it. Use it up right away or place it in ice cube trays in the freezer for later use. Did you know basil is a great source of vitamin K. Basil has been shown in studies to protect white blood cells against radiation, and oxidative damage. Basils volatile oils have also been shown to help restrict growth of certain bacteria including Listeria monocytogenes and Staphylococcus aureus. Ingredients: 1 1/2 cup basil 1 cup pistachio 6 cloves peeled garlic 1/3 cup olive oil 1/3 cup water Salt & Pepper to taste Directions: Toss all ingredients in the food processor, and process till you achieved your desired consistency.
