Shredded chicken berry salad

Ingredients: 6 handfuls of mixed spring greens 1/3 cup diced green onions 1 1/2 cup raspberries 3 cups shredded chicken 1 cup diced avocado 1 teaspoon chopped shallot 1/2 cup pecan pieces Dressing: 1/8 cup olive oil 1/4 cup balsamic dressing 1 tablespoon Dijon mustard Pepper to taste Salt to taste Baked chicken and shred while chicken cools. Add salad dressing ingredients together and whisk. I like using a mini frothier to get the job done it really emulsifies the dressing well. Plate the greens, then green onions, raspberries, followed by the chicken, avocado, shallot, and pecans. Add dressing to the side or drizzle on top and serve. Serving size: 3
