Simmered Eggs with Sundried Tomatoes

The recipe is super fast and simple with only 4 ingredients, it will only take 10 minutes of your time. Perfect for a light protein filled breakfast by itself or to be served with bacon, and sautéed kale, for beautiful brunch.


½ cup water

5 eggs

2 tablespoons chopped sundried dried tomatoes

2 tablespoons finely chopped green onions

2 tablespoons sliced almonds

In a large pan, heat ½ a cup of water over medium, so that an even layer of water skims the pan, and bring to a light boil.

While water is being heated, chop sundried tomatoes, and green onions. Making sure to chop the green onions finely, discarding the root and ends.

Once the water is boiling, crack, and softly lay 5 eggs into the pan so that they are not overlapping.

Sprinkle the sun-dried tomatoes, green onion, and sliced almonds over the eggs.

Cover the pan with a lid, and cook for 3-5 minutes, or until the whites around the yokes are no longer translucent.

Serve, and enjoy.
